IMG_3351I love poppers! These are perfect for a super bowl snack! I love them bacon wrapped, cheddar stuffed, cream cheese stuffed and basically at any meal. Yes, I am one of those people that can eat anything at any time of the day. I don’t need cereal to make me complete. I can remember being yelled at as a little girl for eating pickles and hot dogs in the morning. All I have to say in my defense is if you are not going to get up early enough to cook me breakfast, it’s all fair game! Now I don’t do that combination anymore but I do love leftovers in the morning. You all know you have grabbed a piece of pizza on the fly from the night before. Ok, back to the poppers! Being that we were under a freeze warning, I did not venture out to get much needed bacon but I didn’t let that stop me. I looked up alternatives and came up with my own concoction of filling and loved it! We had it as a side to soup. This soup. They were wonderful. A little tip: to make cutting, peeling and seeding ten times easier, have frozen jalapeño’s on hand. When I buy or pick a bunch, I freeze them whole in a freezer bag. I love how these came out, cheesy and warm with a nice toast on them and the best part is all the filling stayed in the little jalapeño boat!

Baked Chicken Vegetable Eggroll

I was reading a recipe on the cooking channel website by good Ol’ Emril and how he makes eggrolls. Well, I wanted to make this more healthy in some way so I set off to test something out and it turned out pretty darn good! I didn’t miss the pork or the vegetable oil, I added some more seasoning but all in all, I think these were a hit! The savory bite of the cabbage and crunch of the bean sprouts with the subtle soy flavor mixed well with the crunch of the eggroll wrappers that tasted just fine baked! In fact, the trick with these is do not over oil. I used coconut oil and loved the flavor it gave the wrapper. I made these as a treat to go with my Tofu Shrimp Pad Thai noodle bowl and it was just that… a treat.  Adapted from Emril’s baked eggrolls. See note*

I get requests for these whenever I am invited to a picnic. “Oh, can you make those while you’re here?” I have to laugh because while these are so good to eat, they are not something you whip up in a matter of minutes. This one takes a little care. For instance, consider wearing rubber gloves!! Have you ever stuck a finger in your eye that has touched a jalapeño seed?  Well, DON’T! It burns and you will never forgive me if you don’t wear gloves, and we don’t want you walking around cursing my blog. So no, I won’t make these while I’m at your picnic but I will bring them with me and use your grill! So please do not blame me after you make these for the first time and share these delectable cheese and bacon lovelies with your friends when that they start begging you to bring them to every darned event! ‘Nuff said.

I happen to be watching the Food Network. Yes, I just happen to be! Ok, fine! I watch it a lot. Well they were making kale chips. I thought “Hmmm, really?”. You can make something like that and snack on them? Ok, I’m game! So the daughter and I set out to taste test this as we knew we had some left over fresh kale in the fridge. They were not only interesting but we could not stop eating them. In fact, we discussed sneaking these into movies, staying up late to watch “Master Chef” with these in bed and car trip snacks! By the end of our discussion, we realized we ate them all. Shopping list: Buy more Kale!

I wanted to make something pretty but fast. Something healthy but yummy. Something that says, OH, wow, that was good! What was in there? I love bagels and lox, capers, the whole bit. One of my favorite stops in the morning in Key West was these bagels. I wanted to recreate that taste without the bread. Something you can pop in your mouth like sushi and say mmmmm. These little smoked salmon towers did just that.
