When we made this yummy pesto, we had to make something to go with it, right? So my daughter came up with her own recipe tonight and I let her roll with it. Not only was it wonderful, but I loved how she added special little touches like fresh spinach, mushrooms and cherry tomatoes. Nice to have a break and sit back and watch your little one create. I was in the mood for something cheesy yet a little healthy, this is healthy right? Hey if it’s not, I don’t want to know ok? I have to do what I have to do to get spinach into an 11yr old girl without pulling the stunts I did when I was little. We won’t go into that. Anyway yes, this is a daughter approved recipe! Noodles, ricotta cheese, spinach and a marinara sauce ..it’s vegetarian night here the easy way. I got 15 rolls out of this which made enough for 5 people.
This is a really simple dinner but tastes like it took hours. Rich but yet delicate it has a touch of everything I love pasta but not heavy a light ground chicken filling with white wine and spinach ragu. (you can use turkey as well which ever you prefer). Who doesn’t love spaghetti? Welllllllll, I do not like generic spaghetti with the plain old spaghetti sauce. Nope, I don’t even if I am invited over and have to have it I am always looking for cheddar cheese or at the very least a bottle of Texas Pete (lol)! Yes, I said Texas Pete.
