Miso Roasted Cauliflower with Seared Miso Ahi Tuna Steak

misotunafinalSeared tuna is my favorite fish, I love it, cold warm or straight out of the pan. Let me say right off, that when i say seared i mean seared, very pink middle and nice sear on both sides, nothing disappoints me more than overcooked tuna. Since I have had to give up most carbs this sadly included most of my trips to the Sushi bar. This recipe has made my upside down frown right side up once again. I accompanied this with some roasted cauliflower using the same Miso marinade I have used for the tuna. I honestly came up with this on the fly and love how it turned out and each component still stood on their own with each unique flavor. Placed on a bed of spinach which is optional,  but so nice for a light evening meal and the marinade from the searing of the tuna acted as a beautiful dressing. Continue reading →

Talapia with a Artichoke, Tomato, Garlic White Wine Tapenade

IMG_3262I love fish, but I like to try new flavors whenever I can. I tend to steer away from simmering anything in straight tomato sauce so this sauce is a great alternative when you want to incorporate some freshness into a dish but not overpower what you are cooking.  I love artichokes, love them! Whenever I find a new way to use them, the flavor always pays off. This light fish, with the tomato wine reduction and artichoke is a winner. It reminds me of a Greek bruchetta tapenade with a hint of lemon to bring it all together. Served with fresh sauteed asparagus and garlic.

Sesame Seared Tuna with Miso Ginger Dressing

IMG_3192I love seared tuna. I love it on salads or by itself. I have tried different marinades, rubs and even eating it with chopsticks! One thing I am sure of is you have to have that perfect sear on it. Now, mine will not be restaurant perfect but the flavor is there! Tuna is a funny thing sometimes it comes out perfect and sometimes you just don’t nail it and it goes a little bit over. If you are like me that is when colorful vocabulary comes into play but you eat it anyway 🙂 Bolthouse came out with a new dressing that looked perfect to marinade and use as a garnish and I had to give it a try. Tonight, I am proud to say, it came out perfect.

Flounder Crusted w/ Cheddar Chipotle Pretzel Crisps®

When I say this dish is over the top, I mean it! Not only was I won over by this dish, but the toughest of critics in my house were over the moon about it as well. I love buying the tortilla encrusted fish in the store but what I do not like is the ridiculous price they charge. Well, when Pretzel Crisps® sent me a generous sampling of their delicious flavors, the first thing that came to mind was using it to encrust fish! I created a new favorite in this house for sure. It was crispy, wasn’t greasy at all and the fish stayed moist and tender. It was so yummy! Thank you Pretzel Crisps® for this inspiration! It’s a sure-fire winner.

Tofu & Shrimp Curry Noodle Bowl

Well it’s official. I have had the first flu of the season. Let me tell you; NO FUN. But while I was down and out I wanted something spicy I could actually taste! I love noodle bowls and I have been wanting to use tofu in a dish for a while. I tried it once when I was pregnant and let’s face it, everything tastes different when you’re preggy so I wanted to give it another chance and I am very glad I did. Not only was it delicious, but took on the flavor of the curry and brought a richness to the dish that it didn’t have before. The shrimp was an added bonus as I love seafood in just about anything! If you would rather go vegetarian, simply leave the shrimp out. A play off of Pad Thai and a perfect comfort dish for a sick me.
