Talapia with a Artichoke, Tomato, Garlic White Wine Tapenade

IMG_3262I love fish, but I like to try new flavors whenever I can. I tend to steer away from simmering anything in straight tomato sauce so this sauce is a great alternative when you want to incorporate some freshness into a dish but not overpower what you are cooking.  I love artichokes, love them! Whenever I find a new way to use them, the flavor always pays off. This light fish, with the tomato wine reduction and artichoke is a winner. It reminds me of a Greek bruchetta tapenade with a hint of lemon to bring it all together. Served with fresh sauteed asparagus and garlic.

Flounder Crusted w/ Cheddar Chipotle Pretzel Crisps®

When I say this dish is over the top, I mean it! Not only was I won over by this dish, but the toughest of critics in my house were over the moon about it as well. I love buying the tortilla encrusted fish in the store but what I do not like is the ridiculous price they charge. Well, when Pretzel Crisps® sent me a generous sampling of their delicious flavors, the first thing that came to mind was using it to encrust fish! I created a new favorite in this house for sure. It was crispy, wasn’t greasy at all and the fish stayed moist and tender. It was so yummy! Thank you Pretzel Crisps® for this inspiration! It’s a sure-fire winner.

I wanted to make something pretty but fast. Something healthy but yummy. Something that says, OH, wow, that was good! What was in there? I love bagels and lox, capers, the whole bit. One of my favorite stops in the morning in Key West was these bagels. I wanted to recreate that taste without the bread. Something you can pop in your mouth like sushi and say mmmmm. These little smoked salmon towers did just that.

fishfinal1I wasn’t sure what I wanted for dinner but I knew I wanted it to be easy as I had a long car ride in the morning. Something light but summery, fresh and tasty. Fish! Oh how I miss really good fish restaurants. I miss living by the ocean and being spoiled on the fresh catch of the day, We are lucky enough though that 30 minutes down the road is Mike’s Seafood and he has fresh selections flown in every day. He doesn’t sell meat just fresh fish and I love it. So today I picked up some fresh flounder fillets, grabbed some pre-cut lovely broccoli slaw and made my creation. Just wait till you taste the outcome.
