My mother loves Indian cooking, and tonight I thought I’d try my hand at this. Indian cooking is so savory and rich. I just love how all the spices come together and make your whole kitchen smell amazing. The chicken tastes just as divine as the aroma, trust me! The overnight yogurt marinade makes the chicken so tender. Now most recipes use the legs and thighs but i used chicken breasts because I wanted to lighten this up and use skewers. We loved it! The recipe has been adapted from Simply Recipes. Here is my try at Tandoori chicken.

I must confess I love burgers. I love gourmet mini burgers the most with their different flavors. When someone gave me about 30 different kinds of Pepperidge Farms breads to try this past weekend, I decided to put those slider buns to use! (Did I mention Pepperidge Farms make caramel apple bread now??) Everyone here wants their burger different so I decided to give them just that. I made three different burgers, winging it every step of the way just to see which one would be declared the tasty winner. I must say I had a hard time, as did the others in my family. The funny thing is we all picked a different winner. So whichever one you venture out to try, at least you are picking a winner!

To say that I am in love with the new Oikos Greek yogurt dip would be an understatement. I love this as a dressing, as dip for chips, on gyros or fish and now my new favorite; chicken gyros. That is essentially what this is and it’s oh so simple to make. I cut down on the carbs and calories with this by grilling the chicken and by using Flat-Outs in place of the traditional pita bread. They only have 100 calories, they are low fat and are a good source of fiber. They are nice and light and I liked how it let all the flavors shine through. All of these components together made for a wonderful light gyro that was bursting with all those traditional gyro flavors.

I get requests for these whenever I am invited to a picnic. “Oh, can you make those while you’re here?” I have to laugh because while these are so good to eat, they are not something you whip up in a matter of minutes. This one takes a little care. For instance, consider wearing rubber gloves!! Have you ever stuck a finger in your eye that has touched a jalapeño seed? Well, DON’T! It burns and you will never forgive me if you don’t wear gloves, and we don’t want you walking around cursing my blog. So no, I won’t make these while I’m at your picnic but I will bring them with me and use your grill! So please do not blame me after you make these for the first time and share these delectable cheese and bacon lovelies with your friends when that they start begging you to bring them to every darned event! ‘Nuff said.
