Low Carb Bacon Wrapped Stuffed Pork Loin with Roasted White Wine Bacon Onion Brussles

I don’t know where to begin with this. When I thought of this meal in my head it was just a throw something together and pray it tastes good sort of meal. What I ended up creating was something I’d pay for in a restaurant here if someone besides me would make it. Alas we still only have the few restaurants and this is not on it. The pork loin is stuffed with spinach, onion and bacon cheddar cheese. Yes that’s right bacon cheddar. YUM.  The brussel sprouts dive into a mixture of white wine, onions, garlic , butter and of course bacon, little of the fat and then roasted to perfection.  There are a lot of components to this meal but I promise I’ll walk you through it. Braised Crock Pot Crispy Pork Belly

I had followed many a recipe on pork bellies, never getting any of them quite right until now. I found a way to make these little devils tender and then finish them off into a crispy wonderful bite. If you have not tried pork belly before, I encourage you to try it in a restaurant atmosphere first. The love you will feel for this is beyond explanation and you, like me, will then go home and want to recreate this mouth watering perfect thing that hit your mouth. Finally on my third attempt, I think I have it! Soft yet tasty and oh so crispy said the third little piggy. So this is my attempt at doing just that. My spin is a little bit Asian and a little bit pit master with Betty Crocker thrown in. In the end it was something that I had none left of when the night was over.

Kielbasa Sausage Potato Bake with Kale

This one pot meal was perfect for being snowed in. It was easy and lucky for me, I had everything on hand. Zesty potatoes took the place of needed spices and the sausage was filling. The mix of peppers, sausage and onions are classic, after all and the kale just added to that zip of flavors. I used colby cheese on top which seems to make everything more mild. It had nothing to do with the fact that I love cheese and it goes with everything. Simple, filling, yummy and in one pot, you can’t go wrong! Continue reading →

So what is Pasta Primivera? Pasta primavera is a dish that consists of pasta and fresh vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. Sounds good? Then let’s do it!! All accolades for this recipe belong to my brother as he made his version of this for us on our trip to Cincy and we loved it!

cpork11Tonight I wanted to play with my Falksalt, so I decided to use it three ways. In the rub I made for the pork roast, a garnish and on the grilled sautéed  asparagus spears. The result was a crowd pleaser.
