This one pot meal was perfect for being snowed in. It was easy and lucky for me, I had everything on hand. Zesty potatoes took the place of needed spices and the sausage was filling. The mix of peppers, sausage and onions are classic, after all and the kale just added to that zip of flavors. I used colby cheese on top which seems to make everything more mild. It had nothing to do with the fact that I love cheese and it goes with everything. Simple, filling, yummy and in one pot, you can’t go wrong! Continue reading →

IMG_3433Those of you that have been reading my blog or know me know that I love cheese. I have a small problem, in fact, as I have not tried a cheese I don’t like.  It is also my preferred snack of the day and comfort food. Hashbrown casserole, loaded baked potatoes, creamy mashed potatoes with garlic and cheese. I have made them all. Well, tonight I was in the mood for scalloped potatoes. I make these whenever we have ham. The two together are heaven. These scalloped potatoes are super easy to make and oh so decadent.  Creamy, cheesy and the prefect comfort food to compliment any meal, not just ham.

A very nice lady gave me a pile of fresh picked okra. Well, my first thought was “Oh! Fried okra.”. The tired part of me thought “Oh! I am going to stew this.”. So stew is just what I did. I had a handful of fresh picked tomatoes, an onion and some left over edamame and who doesn’t have canned corn? Best part of it all is it could not be easier. Simply slice dice and throw it in a pot!

Country Style Steak Crock Pot Style

salisburyfinalLast night I went to bed wondering what I was going to make for dinner. I knew I was going to be home late and I hate rushing around to throw things together at night. Then it hit me. Why not do country style steak in the crock pot? This recipe is super easy and you can find variation after variation on the net but I am partial to mine and hope you will be too! So anyway, I got up a little early and gathered all the ingredients. Fresh mushrooms, green peppers, onions and an easy, rich and creamy broth that gets poured over tender cube steaks. The best part is that you can put it right in the crock pot frozen! I love using the crockpot as it cuts the frying and flour out. This really is a one pot wonder! Served over brown rice. Cooks for 6- 8 hours on high.

mac16 I love macaroni and cheese but I am not supposed to have a whole lot of pasta, so when I do, I always go for the Dreamfield’s pasta. You go for your favorite elbow pasta as I am going the traditional route today except for one thing!
