This one pot meal was perfect for being snowed in. It was easy and lucky for me, I had everything on hand. Zesty potatoes took the place of needed spices and the sausage was filling. The mix of peppers, sausage and onions are classic, after all and the kale just added to that zip of flavors. I used colby cheese on top which seems to make everything more mild. It had nothing to do with the fact that I love cheese and it goes with everything. Simple, filling, yummy and in one pot, you can’t go wrong!

  • 2 packages of Kielbasa or Polish Sausage (turkey or beef)
  •  2 bags of the shredded Simply Potatoes Southwestern
  • 1 medium red onion diced
  • 1 large red pepper diced or 5 mini peppers diced
  • 2 cups of kale
  • 1 tsp salt
  • 8 oz of colby or cheddar cheese
  • 4 tbs olive oil

Preheat the oven 400 degrees. Put 2 tbs of olive oil in your favorite pan. I used a deep cast iron skillet but a 9×13 pan will do fine and set aside.

IMG_3361In a medium saute pan, add 2 tbs of olive oil for sauteing the onions and peppers. Yes, this is the new OrGeenic pan, pretty color and love the ceramic coating.

IMG_3363After you have diced your onions and peppers, toss into the pan to saute on medium until semi translucent. Add in 2 cups of kale and salt. Saute until the kale becomes bright and wilted.

IMG_3364IMG_3367While this is sauteing, cut open the potatoes and add into a large mixing bowl then set aside.

IMG_3366Slice the kielbasa into discs and put into the bowl with the potatoes.

IMG_3368Remember these potatoes are already cooked so no need to heat up ahead of time. Add in the onion, pepper and kale mixture from the stove.

Mix thoroughly and add into the dish set aside for baking , be sure to add about 2 tbs of olive oil in the bottom.

IMG_3371Slide into the oven at 350 degrees and bake for 35-40 minutes.

While this is cooking, shred your cheese. I love Colby but if you prefer cheddar, feel free to use that. I bought this handy little container at Ikea and was dying to use it.  You shred right into the container and it even has a lid to save the leftovers in case you don’t use all the cheese. (Yea right!)

When the potatoes look crisp and your kielbasa smells delicious, take the pan out and add the shredded cheese across the top.

Put back in the oven for about 5 more minutes until the cheese is nicely melted.
