When we made this yummy pesto, we had to make something to go with it, right? So my daughter came up with her own recipe tonight and I let her roll with it. Not only was it wonderful, but I loved how she added special little touches like fresh spinach, mushrooms and cherry tomatoes. Nice to have a break and sit back and watch your little one create. We hope you enjoy it as much as we did.

My daughter wanted to learn how to make pesto. She said she had a craving and she was taking over dinner tonight. Assisted I assure you, but still her idea. I agreed and off we went to the garden. I have a small potted herb garden that is almost barren from all of the picking but it sure makes it easy when you need just that little something to perk up your dish. Herbs are so easy to take care and best of all you get to eat them after tending to them. We grabbed a hefty portion of basil and headed in. One thing we love in our homemade pesto is walnuts in place of pine nuts. I love the richness it brings with a subtle nutty flavor the pine nuts don’t seem to bring to the sauce. So tonight we are making a chicken pesto and rotini pasta with fresh cherry tomatoes and mushrooms. But first we have to make the Pesto. Creamy and rich with the luscious texture of the olive oil and Parmesan cheese. I can’t wait!

Last night I went to bed wondering what I was going to make for dinner. I knew I was going to be home late and I hate rushing around to throw things together at night. Then it hit me. Why not do country style steak in the crock pot? This recipe is super easy and you can find variation after variation on the net but I am partial to mine and hope you will be too! So anyway, I got up a little early and gathered all the ingredients. Fresh mushrooms, green peppers, onions and an easy, rich and creamy broth that gets poured over tender cube steaks. The best part is that you can put it right in the crock pot frozen! I love using the crockpot as it cuts the frying and flour out. This really is a one pot wonder! Served over brown rice. Cooks for 6- 8 hours on high.

Never say I didn’t try it once! I was at the farmer market last Saturday and I was talked into trying quail eggs. Have I seen them on “Food Network”? Of course. Have I seen them on “Chopped”? Of course. Have I ever dared to try them? That would be a resounding “NO”. Well, tonight we will all be adventurous because I am not in this alone! I am trying two things for the first time tonight; quinoa and quail eggs!
