acorn9 I love squash now my husband not a big fan but this one he will eat and yes even the 11yr old approves. acorn1 You will need:

  • 1 nice size Acorn squash
  • 1 tsp Ground nutmeg
  • 1 tsp Cinnamon
  • 1 tsp sage
  • 1tsp Ginger
  • 1/2 stick of real butter
  • 1 tsp salt and pepper each

***Optional 1 TBS of brown sugar. I use this when I want a touch of sweetness and it caramelizes quite nice as well.

acorn2 Slice the Acorn squash open and scoop the middle and seeds out. (*You can save the seeds and toast them with some olive oil, salt and pepper on a baking sheet if you want something good to munch on later!!)acorn3 Slice your halves in to quarters and then slice one more time in half, this will make nice size slices.acorn4 Melt a half stick of butter, add herbs , salt and pepper in a sauce pan until you get it all incorporated.  (* you would add the brown sugar here too if you are adding)acorn5 Spray a nice size casserole dish with some Pam or olive oil whatever your prefer.acorn6 Lay your slices in the dish anyway you like.acorn7 Pour that beautiful butter and herbs right over the squash and bake at 400 degrees for about 30min. When fork tender they are done.  I like to get this in first and then make the main dish, as this usually means it will be done all together. acorn8When you take them out the should look like this!! Pretty orange color still and those herbs have sunk in each piece giving them just the right amount of flavor. Enjoy!!!
