We all love these but I decided to try and make them on my own and they turned out so yummy. Here is what you will need:steakfingersingreg

Steak Fingers:

  • 4 good sized cube steaks (usually come two to a pack)
  • 2 eggs
  • 2 cups of flour
  • seasoning salt
  • 3 sprigs of fresh thyme or 2 tsp of dried
  • 1 tsp ground black pepper
  • Canola Oil enough to cover the bottom of the pan
  • 1 generous pat of butter

White Gravy:

  • 1/4 stick of butter
  • 2 heaping Tabelspoons of butter
  • 1/2 tsp seasoning salt
  • sprinkling of pepper
  • 2-3cups of Milk

Italian Flat Beans and Mushrooms (optional)

  • 1 pound of cut Italian flat beans
  • 1 pint sliced white button mushrooms
  • 4 TBS of extra Virgin Olive Oil
  • Salt and pepper to taste
  • **Optional 1/4 cup of white wine any on hand

OK here we go! Take your cube steak out and nice sharp knife and cut these into strips about 1 inch each. Set aside and get two plates one for flour mixture and one for the egg mixture.

In the flour add the seasoning salt, thyme and pepper. In the other bowl add two eggs beaten and instead of milk I just use a splash of water as we just want these to water down some right?? (In a lot of restaurants chefs use water instead of milk for fluffier scrambled eggs and omelets did you know that?)  Get your oil ready and add the pat of butter on med to high heat. I use a cast iron pan for this because I like how the gravy comes out in it.steakfingers6Lay the strips into the flour mixture and then dip into the egg wash then back into the flour and roll.steakfingers3They will be covered. Take them right from here and place into your hot pan.steakfingers25You want them to get nice and brown on one side. When ready flip over and wow I am ready eat them now all over again! steakfingers4 Just look at that oil it will be perfect for gravy! When they are nice and golden on both sides put on to a plate with some paper towels and let them sit while we make that gravy! You can put them in an oven safe dish and also place right into a warm oven 200 will do it.steakfingers5Yummy huh I couldn’t stop making them!! LoL My husband said “Who’s coming over?” with a worried face. I just looked over and said O.o nobody silly! OK here is where it gets sticky because my battery died for these pics so I will walk you through it. Next time I make gravy (which we all know will be this weekend lol) I will post the pics in place I promise.  Take the pan and drain off the liquid but leave the good bits in the bottom and a little grease about 4 tablespoons or 1/4 cup. Do not wipe it clean. Put the pan back onto the heat and add the butter, and about 3 tablespoons of flour and make a rue. (A paste stirring it together). Add one cup of milk at a time mixing together until creamy then add the other two cups of milk and stir in. Let the gravy simmer until it gets a nice consistency at this point you can add in some salt and pepper to taste. If it is too think you can always add in some more milk. Ladle some of the goodness into a little bowl and serve on the side for dipping!

Now my husband had this with mash potatoes and the white gravy but I only had the side of the Italian Flat Beans and Mushrooms. Here is the recipe for that.  Take one pound of the flat Italian green beans wash and place in a hot skillet with about 2 Tbs of olive oil, a pat of butter and dump those green beans in.  Toss in the sliced mushrooms and let it simmer for about 5min tossing about every minute. Add in about 1/4 cup of your favorite white wine, pinch of salt and pepper and you are ready to go! I love white wine in veggies oh heck who am I kidding I just love white wine!!  Enjoy!!
