IMG_3192I love seared tuna. I love it on salads or by itself. I have tried different marinades, rubs and even eating it with chopsticks! One thing I am sure of is you have to have that perfect sear on it. Now, mine will not be restaurant perfect but the flavor is there! Tuna is a funny thing sometimes it comes out perfect and sometimes you just don’t nail it and it goes a little bit over. If you are like me that is when colorful vocabulary comes into play but you eat it anyway 🙂 Bolthouse came out with a new dressing that looked perfect to marinade and use as a garnish and I had to give it a try. Tonight, I am proud to say, it came out perfect.

IMG_3216I have seen this done so many times on Food Network and most recently had braised short ribs on a cruise we took. I have always wanted to try it but alas this small town did not have it available until now!  Our local supermarket actually received some and I immediately swooped some of them up. OK, truth be told, I bought all 5 packs!  Since I am now cooking for 5 people and these come about 3-4 a pack I figured more is better. These came out so tender and delicious. The rich sauce reminds me of a really decadent pot roast, only better.  You have to give it a try.

meatloaffinal1Oh yes this was that good. Comforting and warm and ready for winter dishes. This one will get you there. The meatloaf is so moist and flavorful with mushrooms and bacon, but the creamy twice baked mashed potatoes and the melted cheese just put this dish over the top.  Perfect fast dish for the week nights that will make them think it took you forever to make.

burgertrio19I must confess I love burgers. I love gourmet mini burgers the most with their different flavors. When someone gave me about 30 different kinds of Pepperidge Farms breads to try this past weekend, I decided to put those slider buns to use! (Did I mention Pepperidge Farms make caramel apple bread now??)  Everyone here wants their burger different so I decided to give them just that. I made three different burgers, winging it every step of the way just to see which one would be declared the tasty winner. I must say I had a hard time, as did the others in my family. The funny thing is we all picked a different winner. So whichever one you venture out to try, at least you are picking a winner!

pcookiefinalMy daughter wanted me to make her a pretzel chocolate chip something for her Birthday cake this year. I looked at her and said “What?”  She has been on Pinterest  (what else) and saw these amazing chocolate chip cookie cakes but wanted me to make it crunchy. Well, lucky for her, the kind people at Pretzel Crisps® were nice enough to send me a variety of flavors to choose from but I think for this one I will go with Original.

pcookie6The are crunchy and the salt will give the chocolate and caramel sauce just the boost it needs.  Adapted from: Dinner with Julie
