Some nights you crave that burger but without the heaviness of a bun. Well, after going to Bobby Flay’s Burger Palace, I realized I could do this burger any way I want! Instead of on a salad, I saw an idea that made me want to try it immediately and that was taking a grilled portabella and using it in place of the bun. YUM! My all time go to favorite is mushroom and cheddar, so this works perfect. I also love avocado but wanted to try a relish of sorts, more like a chunky guacamole. It was lovely. Now I won’t fib to you, you wont be picking this up with your hands, but trust me, you wont begrudge having to use a fork and knife to eat it.

I tried this salad for the first time in Cincinnati. I will admit I didn’t think I would like it. Something about the flavor profile didn’t strike me, but I was willing to give it a go! I live an adventurous life, right? No, not really, but I will try this. The feta, balsamic and the watermelon go so nice together. It’s a tangy sweet thing that it has going on. It was just perfect and so refreshing. By the end of the night, even my daughter was nibbling. I had to use this recipe for my picnic today.

I was watching “Master Chef” the other night(yes, I watch too many cooking shows). It was Joe Bastianich that made the comments about the stuffed chicken which made me want to try it. If you have read my blog at all, you know I am not crazy about chicken but I am always up for trying something new to make me like it more. This was good enough to get me to change my mind. Joe said the chicken should be cooked to perfection, still juicy and tender with flavor. Above all, cheese should be pouring out of the center. Well, that was it! He said cheese in the middle and I was sure I was making this. My love for cheese is fairly obvious, isn’t it? Oh, well! This chicken was very easy and absolutely bursting with flavor! I hope it makes you chicken doubters enjoy chicken just a little bit more as well.

So what is Pasta Primivera? Pasta primavera is a dish that consists of pasta and fresh vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. Sounds good? Then let’s do it!! All accolades for this recipe belong to my brother as he made his version of this for us on our trip to Cincy and we loved it!
