I don’t do desserts often as I have to be careful with sugar but these are delectable and low on carbs without the white flour! In this recipe, I used coconut flower with the main binder being the eggs and Nutiva red palm organic shortening. I love the Nutiva brand; if you have not tried it you really must if not for the sheer health factor for the taste and versatility of their products. This shortening is ideal for pie crusts, biscuits and cookies.  You can use whatever dark chocolate you wish. I try to use something at least in area of 60% Cocao or higher, the espresso gives this soft cake like cookie a richness I love without all the guilt. My whole family loved these and I hope you do too.

Baked Sriracha Honey & Lime Wings Paleo

swfinal2Wings, wings, and wings. I love them! They are my absolute fave when done right. One thing I do know is I don’t like them boneless, breaded or messed with too much. I love bright flavors and this one takes the ticket.  I saw a recipe on another blog that was very similar to this and thought I’d share mine, I been obsessed with sriracha for a bit , it’s my new hot sauce.  I put it in egg salad the other day and loved it!! Yes, classic egg salad , mayo, mustard and sriracha, a lil salt and pepper equals yum!! These wings are sticky and sweet with the just the right amount of heat.

Roasted Lamb Shoulder Garlic, Rosemary and Root Vegetables #Paleo

I have not had lamb in forever, so when my doctor told me it was on the list of approved meats on the Paleo plan, I was thrilled. I refuse to call it a diet since it is a life change for me. I hopped in my car and trucked it to Whole Foods in Asheville, that’s right I drove two hours for grass fed meat at it’s finest. I bought a beautiful lamb shoulder, 2.5lbs and already tied and ready to go in to oven. The seasonings I used are classic, garlic, rosemary, salt ( I used my natural blend Falksalt), Kerry Gold butter, red wine and love. You will see how easy it is to make this elegant meal paired with roasted root vegetables in a parsnip and turnip puree. Your family or guests will leave the table wanting more.

Crispy Oven Fried Parmesan Green Beans

I had these as an appetizer once in one of my favorite steak houses. Who am I kidding? They are all my favorites 🙂 . But they had so much flavor and I realized they had a dash of chipotle salt in them. Well lucky me, I was able to recreate that flavor in these with my Chipotle Falksalt.  The infused flakes bring a subtle spiciness to the green beans and I really love that. They have an array of flavors to choose from such as lemon. lime, rosemary and garlic. Yes, I must confess; I love rich vibrant salts and these fit the bill!  Oven baked and coated in Parmesan cheese. I used Parmesan cheese instead of breadcrumbs here because it gets so nice and crispy when baked and the lower the carbs, the better for me. It will mimic that crispy texture from breadcrumbs or panko just fine.  So easy to make, so lets get started!

  • One pound of fresh green beans (ends chopped off)
  • 1 large egg,  1/2 cup of egg whites
  • 3 cloves of garlic, minced
  • 2 tsp of Chipotle Falksalt  (if you don’t have this you can use pink Himalayan salt and chipotle powder a 1-1 mix.
  • 1/2 cup shaved or grated Parmesan cheese
  • ½ teaspoon pepper
  • Extra virgin olive oil to coat sheet pan

As I had explained earlier in the year, carbs no longer like me and they are not my friend. I have also moved towards the Paleo lifestyle and have very much loved experimenting and trying all these new things. I plan on focusing on just that this year. Tasty yummy healthier foods without losing any of the favor.  Still using the spiralizer from Paderno,  I actually have been able to create new recipes and can not wait to share those with you. I am going to start with this low carb Carbonara on zuchinni noodles. My family has chosen this as their favorite so far and let’s face it; anything with bacon is a winner in this house.
