Braised Crock Pot Crispy Pork Belly

I had followed many a recipe on pork bellies, never getting any of them quite right until now. I found a way to make these little devils tender and then finish them off into a crispy wonderful bite. If you have not tried pork belly before, I encourage you to try it in a restaurant atmosphere first. The love you will feel for this is beyond explanation and you, like me, will then go home and want to recreate this mouth watering perfect thing that hit your mouth. Finally on my third attempt, I think I have it! Soft yet tasty and oh so crispy said the third little piggy. So this is my attempt at doing just that. My spin is a little bit Asian and a little bit pit master with Betty Crocker thrown in. In the end it was something that I had none left of when the night was over.

Spiralized Zucchini Noodles & Herb Alfredo with Fresh Basil

Oh my, how I love Alfredo but apparently noodles – well carbs in general – no longer like me 🙂 . I have been trying all kinds of things lately. Rice noodles, brown rice noodles, tofu noodles and even mung bean noodles… yes, even those.  Well, I had heard about this spiralizer from Paderno. I actually saw it used by one of my favorite soap stars(What? I am female and I watch a soap. Moving on…) It was amazing. I love veggies!! The idea of making my favorite veggies into spirals intrigued me.  So off I went to purchase my new kitchen item! I must say I have enjoyed it very much. These zucchini noodles are every bit as delicious as the real thing.  My daughter now asks for these instead of her favorite dish, which is meatball and spaghetti. Now let me say I have used these in so many ways already before posting this dish, I have used regular pasta sauce, carbonara sauce which I loved, pesto zucchini and an olive oil and garlic sauce which was yummy as well. Hands down though, this version is a winner for everyone.

bcsfinal1To say that this was good would be an understatement.   Not that I usually try and make things taste like fast food but come on we all know the sense of contentment when that one burger from your favorite fast food place hits the spot and a smile crosses your face. Then we look around to make sure no one saw that. Well this is that sandwich! Melty blue cheese, bacon, warm kicked up Texas Pete sauce and crispy baked Panko breaded chicken..oh did i say bacon?  Ok let do this…..

Gnocchi w/ Asparagus, Shrimp, Mushroom, Italian Sausage w/ White Wine Sauce

Gnocchi is one of my favorite comfort foods. It is not only versatile, but the soft almost creamy texture makes it a sure favorite around here. For this dish I wanted to make something lush, but still add some fresh healthy ingredients. The asparagus, mushrooms and lemon add a nice freshness that brought this recipe to the top of my favorites list.  Parmesan cheese, wine and shrimp brought in the lush I was looking for. Some of us loved the side option of adding the sausage and fresh tomato to the top giving it a heartiness without over powering any of the other flavors in the dish. Me myself, I loved the fresh tomato on top.

Roasted Parmesan Au Gratin Brussel Sprouts w/ Horseradish

I wanted to try something I don’t usually eat and make them in a different way. Yes yes I know your mother made you ate them right?  Well mine too.  I hid them under mashed potatoes, I spit them out, I even dropped them in my milk, just so I didn’t have to eat the dreaded brussel sprouts. Well once you try this I think you will be able to finally say, “Hey I think I like these! Revamped with parmesan cheese, cream with horseradish how can we go wrong?  I had seen this recipe once back during the holidays and didn’t really give it much thought until someone said, “Hey, I like brussel sprouts,” like I somehow offended them.  So this ones for you.  Continue reading
