So the weekend starts out and I hear….”Baby remember at Chili’s we use to have there queso sausage dip stuff?”  Well I knew with that it meant, “how about making me some dip to go with these chips.”  Well my curiosity gave in so I started gathering the ingredients. You will need the following:

  • 3 Links of chorizo sausage
  • 1 cup heavy cream
  • 2 cups milk
  • 3Tbs flour
  • 1/2 stick of butter ( Please don’t use fake butter, don’t you people watch Dr. Oz??)   🙂 Ok be truthful the real stuff is better anyway and now we find out better for you!! Life is good!
  • 2 cups shredded cheddar cheese
  • salt and pepper to taste (you can even use some cayenne if your wish to spice it up!)

In a small sauce pan, you want to get those sausages going on medium heat. When they start to heat it will be very easy to remove the skin. Just slice down the middle with a sharp knife and pop the meat out. My hubby will show you how below….show em dear!

Once you get them unwrapped use a wisk and break apart the meat in the pan kind of like you would taco meat to make it nice and fine. Simmer the meat in the pan on medium heat you will not need any oil for the pan.

While that is simmering, get your medium size pot ready and start the rue for the sauce.  Add in the 1/2 stick of butter to the sauce pot and let it melt, then add the flour and stir till smooth. Now add your cream and milk and stir until nice and smooth.

Add your cheese..try not to eat all the cheese before putting it in the mixture. OH! that’s not you, it’s me 🙂Stir again until a nice smooth consistency is achieved (this is also the same base for a wonderful mac and cheese by the way. If you were makeing that, at this point, you would add cooked elbow noodles cover the mac and cheese with some crispy panko crumbs and bake.. lol Oh my I am on a different tangent now). OK back to the dip! Where was I? Oh! Time to add the sausage. Now at this point I like to drain that sausage as much as humanly possible before putting it in the pot but if you want all that goodness dump it right in! Who am I to stop you?

Blend in and wallah! You have a Queso dip.

Salt and pepper to taste and this is when you would kick it up a notch with the cayenne if it was not spicy enough for you.  Now let me explain this picture below ..you see I went to get a nice pretty bowl to take a picture in and when I got back he (yes, the husband) was already eating it with this grin I will not describe. So why ruin the moment. Esta bueno!
