I had a hankering (is that a word?) for cobbler. But I didn’t just want any old cobbler. I wanted a mixed fruit, so I dug up my favorite recipe and looked at what fruit I had available. I came up with peaches and nectarines from the farmers market, fresh picked blueberries from a friends garden and pomegranate juice which I seem to be in love with right now. On a hot day like today, we had to have some vanilla ice cream to go with it as well. Let’s just say someone else went out for that, I have a cobbler to make!
You will need:
- 3 cups of blueberries
- 2 cups fresh sliced peaches
- 2 cups fresh sliced nectarines
- 2 cups of Bisquick mix
- 1 cup of pomegranate juice
- 1 cup of milk
- 1 tsp of almond extract
- 1 tsp teaspoon cinnamon
- 1 cup butter (2 sticks melted and set aside)
- 2 cups of sugar
This will go into a 9×11 Pyrex glass dish. Preheat oven to 375 degrees.
In a large bowl, add your dry ingredients. Then pour in the pomegranate juice and milk and mix until thoroughly combined.

Set the batter aside and start prepping your fruit. Rinse your berries and take out any stray stems on the blueberries. Those are not fun to chew on, even with ice cream! Slice your peaches and nectarines, removing most all of the skin. No need to get super picky. We want rustic and fresh right?In a large mixing bowl, add your fruit and pour the sugar over giving them all a toss.

Take your batter and pour right over your fruit, then gently take a spoon and swirl the fruit through. Just so some is poking through the top. Some people like it the opposite way as well, putting the batter in then the fruit on top. I will let you choose.Bake for approximately one hour or until crust is a golden brown.
Serve warm, or let it cook. Either way, this is going to be a delicious end to any meal or if you’re like me, a sweet treat in the middle of the day!
