Oh yes, that is what I said. “Starbucks™ Mochaccino Pancakes!” and they were awesome. I had seen this new addition to the grocery store and just had to give it a go. I loved it! Not too sweet like the others, and I even threw it in the blender to make a delicious frappucino. But I knew deep down inside there had to be more I could do with this. Well, upon waking one morning it hit me before I even got out of bed, I was going to make Mocha pancakes! By the way, have I mentioned the nearest Starbucks™ is 40 minutes away? Yes, 40 minutes, so excuse me for the excitement I am showing with this and don’t bother telling me how Dunkin Donuts™ has better coffee yada, yada, blah-blah because there is not one of those here either. So back to my pancakes!
Before we start, let me tell you I opted for the complete mix because I really was anxious to try this and on the box it states : 19-20 pancakes: 3 cups mix; 2-1/4 cups water. Well I have NEVER ever gotten 19-20 pancakes out of these measurements. I get about 12 and you will see they are not huge or bulging off the plate so in saying that, these are the measurements I used and just not the ingredients 🙂
You will need:
- 3 cups of complete pancake mix
- 1 tbs of unsweetened cocoa
- 2 1/4 cups of Starbucks™ Discoveries Cafe Mocha
- 1/2 stick butter * Estimation
- a large skillet
- Your favorite syrup
In a large bowl, add your pancake mix and spoon in your cocoa.
Next pour in your delicious caffeine, I mean Starbucks™ Mocha.
Until velvety smooth, no lumps.
Next you will need a large skillet and a pat of butter. Melt butter in the pan slowly until nice and hot.
Ladle your batter into the pan. I can fit 3 nice size cakes in one pan.
When you start to see bubbles around the edges to the middle it is ready to turn. Keep your heat on medium.
Ahhhhh, don’t they look yummy! You should smell them! When they look like this they are ready to plate.
Add your syrup, a dollop of whip cream a dusting of cocoa and you are in Starbucks™ heaven. At least that is where I am at this moment. Enjoy….
