Creamy Cheesey Chicken Taquito in Nutiva Red Palm Oil

taqfinal2Oh Taquitos, I love them. Well, to be honest, I love anything creamy(as you know) with the word cheese in it. Fry them and they become just irresistible. BUT!! This time I decided to try Organic Red Palm Oil. It was sent to me by Nutiva.  I was anxious to try it and even though it did not mention to use it for frying, I thought why not! It has a wonderful buttery flavor combined with high levels of antioxidant vitamins A and E and let’s face it; when your making something this decadent, you can use all the help you can get! I loved how this came up the rich red color. This oil kept it nice and crisp and the filling melted perfectly. A little sour cram and salsa on the side and your taquito is complete. Grilled Chicken Gyros on Flat-Out Low carb Low Calorie W/ Oikos Cucumber Dill Dip

gpitafinal2To say that I am in love with the new Oikos Greek yogurt dip would be an understatement. I love this as a dressing, as dip for chips, on gyros or fish and now my new favorite; chicken gyros. That is essentially what this is and it’s oh so simple to make. I cut down on the carbs and calories with this by grilling the chicken and by using Flat-Outs in place of the traditional pita bread. They only have 100 calories, they are low fat and are a good source of fiber. They are nice and light and I liked how it let all the flavors shine through. All of these components together made for a wonderful light gyro that was bursting with all those traditional gyro flavors.

Everyone is going pumpkin crazy so I thought I’d better get a move on and make something yummy before the season passes me by! This month has flown by. Myself, I am ready for the cooler weather, the leaves falling and the cool breezes through the bedroom window.  With this season comes some of my favorite flavors: caramel, apples, pumpkin and cranberry.  I love all the goodies that come together with these fall flavors and today I made one that I hope you love as much as my family did. They are super simple and I know you will want to make them again and again.

When I say this dish is over the top, I mean it! Not only was I won over by this dish, but the toughest of critics in my house were over the moon about it as well. I love buying the tortilla encrusted fish in the store but what I do not like is the ridiculous price they charge. Well, when Pretzel Crisps® sent me a generous sampling of their delicious flavors, the first thing that came to mind was using it to encrust fish! I created a new favorite in this house for sure. It was crispy, wasn’t greasy at all and the fish stayed moist and tender. It was so yummy! Thank you Pretzel Crisps® for this inspiration! It’s a sure-fire winner.

Gourmet Pizza 3-ways w/ Store Bought Crust!

So i have not yet made my own pizza dough. I haven’t. I am not sure why, but something in me is fearful of failing at this almighty pizza dough thing. This has not, however, kept me from finding the perfect store bought pizza dough and this is exactly what I have finally done! No, they did not give me this pizza dough or ask me to try it. I  was just lucky enough to find it one day and said “Eh, why not?” since I was not succeeding with any other dough.  Well, BINGO! This is the one. It was unanimous amongst the house dwellers. I have found the perfect frozen dough. Now to recreate my favorites! Creamy leeks and sausage for me, the Soppressata inspired from A TAVOLA and of course a sautéed veggie pizza. I wanted each crust to be different to let you see the choices out there for the home “pizzaiola or pizzaiolo.
