bcfinalWell it’s raining here in the grand Ol’ South in the middle of no where. The sky is gray and the fireworks have been canceled and needless to say I am glad the little one is already in the lights of the big city with her aunt enjoying the day. So I thought to myself NO! I am not going to let this weather get me down. Don’t get me wrong, I am not going out in this pouring rain, but I am however going to make my beer can chicken! I will just have to do this in the oven. It is time to test the new Weber Beer Can Chicken Spice Mix! Good thing I made the Bar-B-Que yesterday(We will see that in another post). Yes, Beer can chicken, why did I capitalize Beer? Anyway, this is what we need to cheer us up with this 4th of July rain out.

Marinated London Broil

chimichuri4I love steak, yes I do! That’s the only thing that’s keeping me from being a full on vegetarian. Alas, steak always gets in the way. I love it covered, smothered, sliced, diced or just plain in all it’s glory. I had to laugh when the doctor told me my iron was low because it was not for lack of red meat!  London Broil is one of my favorite cuts as it is so versatile. You can cut this for dinner, or for sandwiches and use it in tacos. You name it, this cut can do it.   Tonight, I used a marinade and my chimichurri sauce.  This sauce took it over the top but the marinade was spot on so fire up the grill!

My Chimichurri

chimichuri3So I picked up a jarred Chimichurri sauce at a specialty shop while in Charlotte last week and was pretty excited about it. Unfortunately, that ended upon tasting it. It was sweet yet bitter and really nothing I want to taste on my steak so I decided to make my own. Having never done this before, I read the ingredients on the bottle and quickly decided what I didn’t want as a flavor and was able to come up with a flavor profile I was sure I would like.  The only problem with this recipe that there was none left after dinner!!!!!!!! Lemon Dill Chicken Shish-Kabobs w/Veg

cshick13I love anything I can skewer and put on the grill. one of my favorite herbs to use during the summer is dill. I also love making new sauces or marinades for chicken. To be honest I am not a “lover” of chicken so when I can transform it, I get excited! This chicken was so tender and flavorful with he fresh herbs I could easily be convinced to eat this every night. The mix of this marinade and the fresh veggies took this shish-kabob over the top!
