datesfinal2This recipe is so easy, why I don’t make these more often?! Sausage and bacon how can this be wrong? Right?! This is a GREAT appetizer to serve guests before any dinner party. You will completely stump them and leave them guessing at exactly what they are eating. The date is so rich and yummy when baked it mimics a savory meat. The flavors work so well together. When we had this as an appetizer at ATAVOLA, I just knew I had to make these at home.

IMG_3433Those of you that have been reading my blog or know me know that I love cheese. I have a small problem, in fact, as I have not tried a cheese I don’t like.  It is also my preferred snack of the day and comfort food. Hashbrown casserole, loaded baked potatoes, creamy mashed potatoes with garlic and cheese. I have made them all. Well, tonight I was in the mood for scalloped potatoes. I make these whenever we have ham. The two together are heaven. These scalloped potatoes are super easy to make and oh so decadent.  Creamy, cheesy and the prefect comfort food to compliment any meal, not just ham.

Baked Cream Cheese & Cheddar Jalapeño Poppers

IMG_3351I love poppers! These are perfect for a super bowl snack! I love them bacon wrapped, cheddar stuffed, cream cheese stuffed and basically at any meal. Yes, I am one of those people that can eat anything at any time of the day. I don’t need cereal to make me complete. I can remember being yelled at as a little girl for eating pickles and hot dogs in the morning. All I have to say in my defense is if you are not going to get up early enough to cook me breakfast, it’s all fair game! Now I don’t do that combination anymore but I do love leftovers in the morning. You all know you have grabbed a piece of pizza on the fly from the night before. Ok, back to the poppers! Being that we were under a freeze warning, I did not venture out to get much needed bacon but I didn’t let that stop me. I looked up alternatives and came up with my own concoction of filling and loved it! We had it as a side to soup. This soup. They were wonderful. A little tip: to make cutting, peeling and seeding ten times easier, have frozen jalapeño’s on hand. When I buy or pick a bunch, I freeze them whole in a freezer bag. I love how these came out, cheesy and warm with a nice toast on them and the best part is all the filling stayed in the little jalapeño boat!

Creamy Coconut Yogurt Cranberry Apple Slaw

I have always wanted to try slaw with apples but I am not into that tangy vinegar taste combined with sweetness. I was, however, all about trying something new and mixing up some flavors. I bought this new Greek yogurt that was coconut flavored and very thick. I thought this would hold up great in the slaw. I could cut the mayo by half at least and still pack tons of flavor in there. This sounds good so far, right? Coconut, apples, cabbage, and mmmm-mmmm cranberries for something a little sweet but keeping with the tartness of the granny smith. It went perfect as a side and even my finicky slaw eating mother liked it. Yes I said finicky, and I meant it. As for the rest of us easy to please people, we loved it and hope you will too.

A very nice lady gave me a pile of fresh picked okra. Well, my first thought was “Oh! Fried okra.”. The tired part of me thought “Oh! I am going to stew this.”. So stew is just what I did. I had a handful of fresh picked tomatoes, an onion and some left over edamame and who doesn’t have canned corn? Best part of it all is it could not be easier. Simply slice dice and throw it in a pot!
