My Chimichurri

chimichuri3So I picked up a jarred Chimichurri sauce at a specialty shop while in Charlotte last week and was pretty excited about it. Unfortunately, that ended upon tasting it. It was sweet yet bitter and really nothing I want to taste on my steak so I decided to make my own. Having never done this before, I read the ingredients on the bottle and quickly decided what I didn’t want as a flavor and was able to come up with a flavor profile I was sure I would like.  The only problem with this recipe that there was none left after dinner!!!!!!!! Stuffed Vegetarian Mushrooms

stuffm18Every year I used to count on one thing… my dad’s stuffed mushrooms. They always brought a smile to my face, whether it was during super bowl or for my birthday, I could count on them once a year… maybe twice if I was lucky. Now that he’s no longer cooking my dinners, I have to make this happen myself.  It was always the same base but sometimes he would throw something else in there and confuse me. Well, for my craving I kept it simple, only adding a little mozzarella cheese, because I figured more cheese can’t be bad right?

Lemon Dill Chicken Shish-Kabobs w/Veg

cshick13I love anything I can skewer and put on the grill. one of my favorite herbs to use during the summer is dill. I also love making new sauces or marinades for chicken. To be honest I am not a “lover” of chicken so when I can transform it, I get excited! This chicken was so tender and flavorful with he fresh herbs I could easily be convinced to eat this every night. The mix of this marinade and the fresh veggies took this shish-kabob over the top!

Vegetarian Spinach Lasagna Rollatini

roll18I was in the mood for something cheesy yet a little healthy, this is healthy right? Hey if it’s not, I don’t want to know ok? I have to do what I have to do to get spinach into an 11yr old girl without pulling the stunts I did when I was little. We won’t go into that. Anyway yes, this is a daughter approved recipe! Noodles, ricotta cheese, spinach and a marinara sauce ..it’s vegetarian night here the easy way. I got 15 rolls out of this which made enough for 5 people.
