cc6Yes, I bake too!! You didn’t think I could just make entries without making desserts did you??  This recipe was handed down to me by my Mother and she will be the first one to tell you we do NOT make it the same way. Why you ask? Because I do not have anywhere near the patience she has. My motto is if it tastes the same let’s let the modern world of electricity help!  I am making this for a very special co-worker of mine. You will need all of the ingredients below and 1 large 9 inch spring form pan: Continue reading

In the mood for Seafood?

Believe it or not my little one asked for this one tonight.  Sauteed Tilapia with Piccatta sauce! I also whipped up a little dessert for someone special…you will have to check in later to see what it is, I would hate to ruin the surprise.

Mortadella is an Italian cured sausage, that in my opinion tastes like a jazzed up piece of bologna!  There is an Italian deli that makes these amazing sandwiches here in this little town but when you have to buy three it can get expensive so I said “I’m going to give this a whirl and make my own twists.” Here is how it went! This serves three people.

Pepperoni Rolls

These are amazing …I have made these off and on since high school and recently saw them posted on Pinterest so I thought I’d share my version.  These little things are, well as my sister-in-law would say (driving my brother mad), “They are amazeballs”. Ok, here are the ingredients and these are really versatile don’t get too hung up on measuring. It’s really whatever you have!

  • 1 can of refrigerated biscuits ( I used the buttery flaky kind because I like them, crescent rolls would be great too!)
  • about a cup of the mini pepperoni’s
  • 1 cup of Mozzarella shredded cheese
  • 2 Tbs of Parmesan cheese

*** You can add whatever else you like! Some red pepper flakes to make them spicy, black olives, or if you don’t dig pepperoni (clears throat, cause I can not imagine this) you can use jarred red peppers (chopped into small bits), or even mushrooms , really anything! Just think pizza!!

Mix everything but the biscuits together in a bowl, if you like some fresh herbs in there add them! I added a tiny touch of oregano because I am not a big fan but wanted the fresh taste.

Take each biscuit, flatten it and put the yummy ingredients in the center then start to roll that baby up.   Pinch each side up to seal it and then literally roll into a ball and close. (see image above for help)

Place each ball onto a baking sheet and bake at 375 for about 10minutes. Watch and determine your color.

Stop watching the oven you will get one soon!

And here they are!!  I served them with my Parmesan Capresé. Dipping these in tomato sauce is just like having a little pizza appetizer and I don’t mean those frozen things from the bag! Great for parties or Superbowl!!  Enjoy!!
