This is a really simple dinner but tastes like it took hours. Rich but yet delicate it has a touch of everything I love pasta but not heavy a light ground chicken filling with white wine and spinach ragu. (you can use turkey as well which ever you prefer). The Capresé salad is a beautiful side offering your family or guests won’t soon forget with a basil lime vinaigrette you can find here. I hope you enjoy it too. Continue reading

These are amazing …I have made these off and on since high school and recently saw them posted on Pinterest so I thought I’d share my version. These little things are, well as my sister-in-law would say (driving my brother mad), “They are amazeballs”. Ok, here are the ingredients and these are really versatile don’t get too hung up on measuring. It’s really whatever you have!
*** You can add whatever else you like! Some red pepper flakes to make them spicy, black olives, or if you don’t dig pepperoni (clears throat, cause I can not imagine this) you can use jarred red peppers (chopped into small bits), or even mushrooms , really anything! Just think pizza!!
Mix everything but the biscuits together in a bowl, if you like some fresh herbs in there add them! I added a tiny touch of oregano because I am not a big fan but wanted the fresh taste.
Take each biscuit, flatten it and put the yummy ingredients in the center then start to roll that baby up. Pinch each side up to seal it and then literally roll into a ball and close. (see image above for help)
Place each ball onto a baking sheet and bake at 375 for about 10minutes. Watch and determine your color.
Stop watching the oven you will get one soon!
And here they are!! I served them with my Parmesan Capresé. Dipping these in tomato sauce is just like having a little pizza appetizer and I don’t mean those frozen things from the bag! Great for parties or Superbowl!! Enjoy!!
