When I set out to make burgers tonight, I knew it would be something with brie. I got an unbelievable price on a little wheel. $1.99! When does this happen? Rarely. So, I didn’t want to waste this melty cheese on a cracker tonight. Tonight, I wanted it melty and gooey and on my favorite guilty pleasure. A burger from the grill. Seeing as how this was a special burger already, I would also need some special toppings. I have had this jar of Trader Joes Giotto’s Bruschetta sitting in the pantry for a while and I thought why not make some tomato aioli with it. Easy enough, right? It has everything I need; sun-dried tomatoes, garlic, basil and some spices.  Saute some onions and I have the makings of a gourmet burger. Hmmm, maybe I should charge tonight?

Grilled Stuffed Flank Steak Pinwheels

I bought these once at Fresh Market already done and they were delicious. Well, I got a heck of a deal on a very pretty piece of flank steak so I thought I’d try my hand at this. I mean, I know what it is supposed to taste like, I am pretty good at grilling steak and I will stuff anything that doesn’t move with cheese!  They came out really nice; rich and they had a buttery texture like the perfect fillet. The flavor from the garlic and parsley went really nice with the spinach. I love how pretty they are when they are on the skewer for a really nice visual presentation. This is perfect for date night. I served this with veggie quinoa topped with a decadent quail egg.

California Burger w/ Portabella Bun & Avocado Relish

Some nights you crave that burger but without the heaviness of a bun. Well, after going to Bobby Flay’s Burger Palace, I realized I could do this burger any way I want! Instead of on a salad, I saw an idea that made me want to try it immediately and that was taking a grilled portabella and using it in place of the bun. YUM! My all time go to favorite is mushroom and cheddar, so this works perfect.  I also love avocado but wanted to try a relish of sorts, more like a chunky guacamole.  It was lovely. Now I won’t fib to you, you wont be picking this up with your hands, but trust me, you wont begrudge having to use a fork and knife to eat it.

cpork11Tonight I wanted to play with my Falksalt, so I decided to use it three ways. In the rub I made for the pork roast, a garnish and on the grilled sautéed  asparagus spears. The result was a crowd pleaser.

bbqfinalEver since i made this, I could not stop talking about it. Now let me tell you, I make this all the time as it’s a go to especially when I am going away and need to leave a lot of something for the crew to eat. But I wanted to try something new so I saw Anne Burrell’s recipe on Food Network and revamped it just a little for my taste. Well my taste buds said YUM!! The dry rub and beer made it’s own sauce that was to die for. I didn’t make my own sauce, I didn’t grab my go to bottle in the fridge. This was awesome on it’s own. I love anything I can throw on the grill and forget about. You can also do this in the oven, so no worries, you non-grill-owning people.
